TECHNICAL SPECIFICATION


VINEYARD LOCATION: Hills to the east of Lake Garda, on the slopes of  Verona, the Bardolino Classico zone.

SOIL: Morainic.

VINE TRAINING SYSTEM: Pergola corta veronese.

GRAPES: 65% Corvina, 30% Rondinella, 5% Molinara

HARVEST: Rigorous hand harvesting which begins in the second or third week of September and goes to the very end of the harvest. These are the same grapes which are sued in the famous Valpolicella, but are grown in different areas – closer to Lake Garda on hills and morainic ground, which give the wine its own unique character. Generally this is a medium-weight wine, with a fresh, fl oral bouquet, which can be drunk in the spring following the harvest. It can be enjoyed after a relatively short spell in bottle.

VINIFICATION: The grapes are pressed a short time after harvesting and fermentation takes place in temperature controlled stainless steel tanks for approximately 15 days. After several filtrations, the wine is racked off again into steel tanks where it rests until it is put into bottle.

WINE AROMA / PALATE: This is a wine that should be drunk young because of its lightly fruity and fl oral wine, which often resembles wild roses or a fresh bouquet of flowers. When the wine is decanted it loses some of the floral character, which is overtaken by a fruitier, better balanced palate.

FOOD: As a lighter-bodied wines, this is good with starters, salsas of tomatoes, and fresh-water fi sh dishes.

SERVING TEMPERATURE: We recommend that you serve between 15 and 18ºC.
